Dry Malt Extract is sometimes called DME contains less than 3% moisture and
can be properly stored for up to 4 years as per studies. Putting Liquid Malt
Extract into a slowly moving band passing through the vacuum makes dried
Malt Extract. Drying occurs with the circulation of hot air through this
moving bed of material. The vacuum allows evaporation to happen at a lower
temperature and aids the extract to puff.
